Hi, I want to buy just one or two graphics cards to begin mining

Am I better off with an AMD or should I get a GTX 1050, 1060, or 1070.  1080 is a bit too expensive but how much does the hashrate vary from 1050-1080.

Are AMD Radeon RX any good? 480-580

I preferably want to mine Etherium or Litecoin but I'll settle for less popular coins if I have to.

Missed the boat for LTC.
If you want to mine ETH go with a AMD Vega56 if you can afford. Although monero is currently more profitable.
The 1070 will get you on algos like Zec, or Lyra2z

If i'm you i will buy nvidia 1070, it has one of the best cost/performance ratios out there.
I have a lot of them and i plan to buy even more.

If you dont want to spend that much money, you can go with 1060 6gb. Its nearly the same cost/performance, but has lower resell value for me.

For ETH mining you can go with AMD rx580 which has the same hashrate as 1070 nvidia, but is cheaper.
However RX580 are good mostly for ETH and Cryptonight, for the other algorithms there are no good.

For  Etherium better the AMD Cards. If you want to select RX 480 (TDP: 150 W, Power Connector: 1x 6-pin) or RX 580 (TDP: 185 W, Power Connector: 1x 8-pin). If you want to know hashrate or other things can visit to whattomine.

When you say I missed the boat does that mean that I can't get anything from LTC, like not even a dollar a day?

And if so won't that happen with ETH also, where in a year from now it's fruitless trying to mine that with a gpu also?

For Algo Equihash better used NVIDIA, But EThash better used AMD cards. some peoples used both for switch algo and price, power consumption is sometimes to be the reason.
