I have £1000 +/- 10% that I would like to spend on preferably a mining rig with GPUs (although i'm not put off by ASICs). My initial plan would be to mine etheruem (although I am aware it is going to be fully POS soon). I am new to this so would appreciate any suggestions. I have put together a basic rig (https://uk.pcpartpicker.com/list/W6rwGf). All I would need is a CPU/mobo combo.

Also, would I need a mobo that supports 4-way crossfire or just one with 4 PCIe slots?

If I'm being dense please tell me!
Even if you use Bitcoin through Tor, the way transactions are handled by the network makes anonymity difficult to achieve. Do not expect your transactions to be anonymous unless you really know what you're doing.

Dude you missing alot of things. Get an evga 1300w g2 platinum or evga p2 1200w PSU.  Msi z270 Mobo and 4gb ddr4 ram. Cpu g3930 Celeron. Riser with self power. A hard drive.

You don't need a mobo with crossfire functionality.
Try to obtain a "miner" mobo like Asrock H81 pro BTC or Biostar TB85 / TB250.
there are also new generation boards like Asus b250 mining expert.
beware these usually have p1150 sockets so CPUs are a bit rare nowadays.
You are going to need "PCI-Express risers" to connect your GPUs to PCI-express X1 slots on the mobo.
