As many as your MB will work with? I've seen as few as 3, and as many as 6. 4 seems to be a good number, tho.

Just curious how many cards people have managed to fit into a milk crate style rig?

With risers its really all up to your MB.  A milk crate is enough room to spread a decent amount apart.

I'm not sure where the picture is, but I've seen someone that crammed 8 GPUs, 2 motherboards and two 1200w PSUs in one milk crate.

Although I think the GPUs were sticking out the top, so you wouldn't be able to stack them.

What you see in my previous posts are as good as it gets with a milk crate. The cards in there have dual GPUS. The maximum windows can handle is 8 GPU cores.

From my experience, a typical file crate like this one at Office Max can hold 5 GPUs, although air flow becomes a problem with that many since they are crammed so tight together. I think the ideal number is 4. It still gets hot, but as long as you have a box fan blowing air in between the GPUs, you should be good.
