Am having a dual eight core server with 32 cores id like to test if it would be possible to mine Ethereum or not, any program out there to do this ??...

you cannot mine ethereum with cpu
but you can mine cryptonite coins such as monero electroneum and many more
and then you can exchange them for some ethereum

it seems like ur saying my best option is to use nicehash or something similar, is that a good option ??...

Get the monero and electroneum until the complexity is relatively low, then you'll regret if you do not do it)

you can try to mine biblepay coin. its antigpu antiasic algo. therefor its profitable for cpu miners.
all other type of coins mineble with gpu or asic is non profitable for cpus.

Try minergate GUI software
You will see what hashrates you could get
