So I have found this altcoin that currently only has CPU mining software.
Are there any guides on how to write the software for a GPU miner from scratch?
I basically need to build GPU mining software in order to mine it on my GPU.

There are several different types of Bitcoin clients. The most secure are full nodes like Bitcoin Core, which will follow the rules of the network no matter what miners do. Even if every miner decided to create 1000 bitcoins per block, full nodes would stick to the rules and reject those blocks.

There is a whole suite of miner software available to you that is free to use (minus the authors fee).  What coin do you want to mine?  Tell us and you will get all sorts of recommendations on what to use.  Also - what graphics card are you using?  Some cards are better suited to certain coins.  You want to mine a profitable coin for your card, then use those profits to by the coins you want to have.
