I'm looking for one to start accepting Bitcoin and maybe other crypto.

Here's some features that I would like:

Mandatory:

-Automatic btc to fiat conversion option available.
-Can be integrated to major e-commerce platform.

Really nice features to have:

-Segwit support
-Can also accept alt coins that can be automatically convert to fiat and BTC

I think Coinpayments.net is is what you are looking for https://www.coinpayments.net
I think they have mostly things that you need. You can accept over 115 altcoins. I'm only not sure about SegWit, I don't know does they support it.

Segwit is not mention anywhere on their site so they most likely do not support it imo.

Do you know if they automatically convert the crypto to fiat themself or the account must be linked to a external exchange to provide this service?

I've heard good things about bitpay. KFC uses them so you know they can't be that bad. That's pretty mainstream and they'd want to have all of their ducks in a row before subjecting their clients to it.

Go with either Bitpay or Coinpayments. If you care more about anonymity then probably coinpayments but otherwise, Bitpay is the better option. Your funds are going to be safer, and there will be similar amounts of functions if not more compared to coinpayments. Bitpay is also a lot more mainstream than coinpayments, a lot of real life merchants and big international sites(i recently used apmex with bitcoin) use it as well.

But coinpayments does have an advantage - it basically supports all the active altcoins. Technically it's possible with bitpay with shapeshift, but it's a whole other step for the customer to take and there's going to be 2 third parties involved.

There's Bitpay who's an old timer and shouldn't be doubted about its service, although it's getting more and more hostile towards customers recently
Stripe also recently starts to accepting Bitcoin transactions

There's a new payment processor called BTCPay, people says its gonna replace Bitpay completely
It's completely free and open source so you won't expect any hidden fees, its still in test though but if you want to be one of its testers you are welcome to it

Here is the link for Bitpay and Coingate payment APIs. Please check the FAQ and information given in the link according to your need. Then you proceed to have the API in your e-store site buddy.

I see you need to get the bitcoin payment converted in fiat cash. For that coingate would be best option for you and payment processing needs the 1% fee for the conversion of USD or EUR.
