I've always wondered, what if MtGox or any other major exchange were to be exploited and have all their funds stolen (if that's even possible). What would you think?

It deepends on BTC amount lost. If small in terms of their yearly revene then you would not notice it

I think a new exchange in Denmark, Norway or Island will be more trusted then Gox and Co.

How about an exchange in Sweden, they're laws seem better than the average.
and yes, there is a risk, mtgox is having problems already.
