1. 1600w should have absolutely no issues, 1070s work most efficiently with lowered power limit, my systems with 6 1070s and 1000w psu have been stable for more than a year now, power draw is around 750w with my setup. As for psu cables, 2 gpus max for pci-e cable, most 1070s come with 1x 8pin power so the cables on your psu should be adequate without any additional adapters. 3 molex for risers off single cable or 1 sata for riser off single cable max, avoid using sata or molex to sata adapters if possible. Personally I haven't run into issues with those, but I use max of one per rig but I've seen people with burned cables so beware.
2. SSD size doesn't really matter, some algos will require larger swap file, I've set mine to 32gb and never had problems, although I like 128gb ssds in my rigs for resale value and convenience.
3. This depends on the algo and miner used, some have little to no performance impact, some will render desktop basically unusable, typically this can be worked around by setting low intensity to the primary gpu, or simply mining low intensity algo like cryptonight for example.
