I am planning some new builds.

I am thinking about using the Asus B250 mobo since the removal of GPU limit with the update for Win 10.

I have a question though and i hope that some prople here are using this mobo.

I am going to use server psu:s only in this build. The Asus B250 requires 3x24 pin connectors. Can i use three of these ?

I am using powered USB risers but will 3x180w max be enough for the motherboards ?
I guess that most power for the gpu:s will be pulled from the power connectors and risers anyway ?

Yup its only optional to power three. If you have a PSU that can power all your cards than you just have to use one and you are good to go.  You can power the second or third at your discretion for more power if needed. Otherwise power up one and mine away!
