I would like to sell my Jupiter preorder.
I assume there must be some trusted third party who would accept the payment in bitcoins and then I would give that person my account info so that he could change it over for the buyer. Is that how these things work?

Yes, like an escrow service. It would help if you have trading history from other sources to help prove your credibility.

No, if I thought they were a scam I would ask for a refund. I could just use some extra cash for a piece of land that is for sale I wasn't expecting...

But if nobody offers me the 67 btc I paid for it, then I will just keep it.

Not quite that much, I did pay for shipping, and you might be looking at the mtgox price which isn't the bitpay price.

I figure this preorder would get somebody a device 2-3 weeks sooner, which is worth a lot more than that.
