I set up my worker and everything through Gbyte's Pool and Kiv's GUI interface, but how do I know if I'm making coins, where can I check?  or do I need to set something up in the Bitcoin application to receive my coins or see how many I've made?  I'm new to this and very confused

The Bitcoin network protocol was designed to be extremely flexible. It can be used to create timed transactions, escrow transactions, multi-signature transactions, etc. The current features of the client only hint at what will be possible in the future.

I don't use that pool, but with most of them, I believe that you check your production on the pool's webpage.
