BFL products including the Jalapeno is ASIC hardware, which only works for BTC.

Altcoins use Scrypt, which need to be mined using GPU or regular computer power.

Litecoins, so I've heard.
In any case, two 2-cpu boxes should do, right? I have 2 1-U servers lying idle, with 2 AMD Athlon MP 2600 cpu's each. Would that work, or is it too old (32-bit).

Wrong, wrong, wrong.
Not all Altcoins are script based. A few examples include Namecoin (NMC), Devcoin (DVC), Ixocoin (IXC)...
Any SHA256 altcoin can be mined.
All others, can't.

BTW, this is an quite answered question, in this forum.

Sha 256 coins , most are scrypt though

Yeah, scrypt coins can't be mined with asics.
