Well if you think about it, given that dice sites make money statistically from the house edge, it makes more sense for me to operate the site properly for the long run. Plus, the pseudo-anonymity of bitcoin makes stolen bitcoins really hard to use because you can track it forever, and spending them will likely result in being caught, so it would be really stupid for me to steal your bitcoins.
