Can someone give me some use cases for them? Having a hard time imagining how they could be used.

Once a transaction has 6 confirmations, it is extremely unlikely that an attacker without at least 50% of the network's computation power would be able to reverse it.

The contracts page on the wiki gives some examples on different uses and explains how the various SIGHASHes works.
