This book is probably one of the best resources for learning about bitcoin and the blockchain in my opinion.
"Antonopoulos A. M. - Mastering Bitcoin - Programming the open blockchain"

I haven't reached chapter 7 yet which talks about the blockchain, but all the preceding chapters about
keys, addresses, wallets, transactions, etc, have been great.

I agree that books can be a great source of information for crypto. I perosnally love Andreas Antonopoulos - the Internet of Money.
However, in regards to courses - The University of Berkeley teach have a blockchain course that can be accessed for free online. Its very in depth - would recommend. They also have a course for developers.I will post the links of both below. Furhtermore, princeton university also teach a Blockchain/cryptocurrency course. Once again, its pretty extensive. These are two very well respected institutions, there is lots to learn from both.

Berkeley - https://blockchain.berkeley.edu/decal/sp18/fund/
Berkeley Developer Course -   https://blockchain.berkeley.edu/decal/fa17/dev/
Princeton Course - https://www.coursera.org/learn/cryptocurrency

Enjoy!

Have you taken a look at the Bitcoinwiki? In it, you will find a lot of useful articles related not only to the forum and how it works but also to the blockchain, technical stuff and many many other interesting information.
Here you have a link to the technical section > https://en.bitcoin.it/wiki/Category:Technical
Also, in there you can download "Mastering Bitcoin", the book that wisely is been recommended to you.

Google is one hell of a place to start from but you can easily get confused there because of numerous web articles.I wouldn't advice you to go there and read random articles. Instead use here; this forum is a great place to learn. This technical section alone can make you become an expert if you pay good attention and this is because most questions asked here are real life problems with working solutions.

The first thing you should do is read the book by Andreas M. Antonopoulos. It is not necessary to read it completely, but the beginning will give you a knowledge that most people do not have.

The second step would be to read the discussions here on the forum, on quora and on Reddit. This would give you an idea of the community's feelings and how people imagine the future of Bitcoin.

The third step is to read the whitepaper written by Satoshi. It is a very simple text and not as technical as some imagine.

Never pay for a course without first researching the author in the community. If someone is selling the course, but it is difficult to find their opinions on the forum, Reddit or other community. This means that he is just repacking another course and selling as if it were his. This is very common.

There's a course on Lynda that will teach you about Blockchain theory.
It won't make you able to code and create your own Blockchain, but this should give you the fundamental idea of Blockchain Technology and how it works Smiley

https://www.lynda.com/Blockchain-tutorials/Blockchain-Beyond-Basics/636127-2.html

The teacher are easy to understand and his explanation are illustrated with animation, making it easier to understand.

These very simple courses you can find the equivalent information on Youtube video itself. Moreover this is paid services secondarily. I do not want anyone get scammed in these online courses. Simply waste of time and money go through the paid video tutorial made with computer voice.
After Education has become a big earning business. Learning the normal person who is skillful in that field works better than coaching class tutorial. Please stay away from these kind of services.

You may look the youtube video below which has the same information in that.
