There are many other things that makes bitcoin so good, anonymity is just an option. If you share you wallet with all informations about yourself you will not be anonymous, but if you wish to be you can do it, you can even use bitcoin mixers to hide tracks to your wallet. Now we are at your second sentence, what we really need is independence but from fiat currencies, because owners of fiat are banks and governments, and crypto can give us that independence, if we know how to use it. We need some kind of regulations, without it we can expect chaos, but crypto is already regulated, it have it`s own laws, there are things you can do, and things you can`t.
