Hey guys, sorry for the noob question, I'm just finding my way around the miner. Is it possible to
set Avalon 741 to mine 2-3 coins at the same time and how? Thanks!

Only if you are able to find altcoins which support merged mining.

You may want to check out slush pool which supports this, It really doesn't provide you with much extra, never even really saw the stats on conversion. Not sure if there are other pools running this at the moment.

Thanks, guys! So, machine is definitely capable of this, the rest depends of pools and coins themselves?

Yes main thing is that the coin & pool must use the SHA256D algo as being an ASIC-based miner the algo cannot be changed.
