  What is the use of escrow for the coins already trading on the exchanges ?

To be simple, for the already listed coins,
1) let's assume that you want to buy GDC node.
You have to buy 1000 GDC at exchange.
But there are no selling order.
Then you have 2 choices, wait someone to dump, or buy at market price.
Previous one needs time to gather coins (which is loss of time to get reward from MN),
later one needs more BTCs.
2) For the seller side view,
If you want to sell GDC MN.
That means you have to make order for 1000GDC.
Also there are 2 ways you can sell.
Sell at market price, or wait until someone buys.
Previous one is fast but gives you loss,
later one need some time, and hard to sell at once
