At the same time, the wallet doesn't give you control over your private keys so your identity may not be at risk but your funds definitely are. If you want to have both, run a full node instead of a SPV wallet/online and use a mixer.

As @OmegaStarScream stated, any wallet you choose leaves your bitcoin at risk, whether it's a hot wallet, hardware wallet or even a cold storage wallet and true anonymity is near impossible to achieve using Bitcoin.

Pretty much almost every wallet nowadays. Electrum for example, will generate a different address for every new transaction you make. You could also use a Bitcoin mixer to avoid being tracked.

1. Use anonymous altcoins, but then your service may reach smaller number of users.
2. If you want to use Bitcoin, then you may need to use a (reputable) mixer to fund your sending addresses.

However, whatever you do, I advise you use proper local wallet, where you have access to your private keys, seed, or whatever you need to clone that wallet if you need that (like hardware crash).
