Transfering a wallet.dat file to another computer, does it transfer the immature coins as well or do you need to wait for coin maturation/confirmation until you transfer the wallet.dat file?

There are no coins in the wallet.dat.  The value is all stored in the blockchain that everyone has a copy of.  Wallet.dat just has the private keys and addresses so the wallet can search the blockchain for any unspent value that is assigned to any of your addresses.

Therefore, as long as the immature coins were sent to an address from that wallet, they will show up in the new wallet.
