I'm just starting out, and I have 2x Gigabyte 7970s. Is this a decent rig to start with? I can get about 1.1MH/s mining LTC on cgminer with no problem, maybe more if I tune things. What are some good pools to sign up for?

wemineltc.com is a good one, they have huge miners, no fees and DDOS protected.

With a rig like that you could successfully mine many of the altcoins.  www.multipool.us is a good one because it can automatically mine the most profitable one, or you can tell it to focus on one coin.  there are also many other pools that do this.
