Depending on your case, air flow might be an issue. There's also the risk that the metal accidentally contact parts of the card it shouldn't and fry it. Without a picture, it's hard to guess how exactly you're going to do it. Whatever you do, just double check, use microwavable plastic sheet (so they don't melt) if necessary to act as an insulation against accidental metal to metal contact.

You know, man, a picture of how things actually look like in your case would really be useful at this point...

Cable ties with extenders are fine.  Depending on your card and case, you may even be able to drill a hole where the screw goes to screw it in place.  Additionally, consider using some shelf liner to prevent metal contact and be conscious of the air flow because air flows out of the card in multiple directions.  If you can add a fan to help exhaust it will help your temps.

It looks like you should have quite a bit of space at the top near the 5.25" drive bays so should be OK. Like I said, just be careful not to let the exposed parts of the card come into contact with the case itself even if somebody accidentally kicks your case.

If you're not going to be doing anything else intensive on the system apart from mining, the extra bit of hot air at the cpu won't likely cause a problem. Plus the top fan looks like it's an exhaust fan so that should help pull most of the hot air away. To be safe, you could make duct (out of cardboard or plastic) and stick it onto the CPU fan to ensure it pulls cooler air from higher up. That is assuming you are going to run open case

Only other potential issue is the RAM might get too hot since they don't have ramsinks. Might be good to consider putting some kind of heat shield so that hot air from the GPU exhaust doesn't hit them directly. Or a smaller fan blowing across the memory slots to cool them as well as quickly push air towards the top exhaust fan.

To save cost and effort, you could try running the rig first, observing for any problems before implementing any sort of relevant remedy.

Pay attention to the CPU temps, but you should be ok as long it is only mining.  I agree also about the heat shield.  I have one behind each of my cards because air blows out the back and makes my hard drives extremely hot. 

I'm not really sure how to best organize the air flow.  Is your side open?  Does your case mount vertically or horizontally?  I'm assuming you at least leave the case open because of the supplemental 80mm fan.  BTW, I'd upgrade that fan to a 120+mm and try and position it a bit differently. 

Fans when they sit very close to an object will have a dead zone in the center where the motor is.  Simply backing your fan off a couple inches will help, but so will adjusting it so that the motor doesn't sit directly on top of the gpu.  You may notice a 1-2c change in temps for your middle card with that simple adjustment.  If you put a new 120 or 140 mm fan over the cards you can move the 80mm to the 5.25 bay.  You may need to play with the positioning and the direction so that it keeps the your memory, cpu, and the gpu stable.

Another thing to consider is to put the drive bay gpu upside down--meaning the gpu fan facing the floor if your case is vertical and just like the cards attached on the mobo.  Unless you are willing to cut a hole in your case above the drive cage, it may work better with the natural airflow direction.

That certainly can be helpful in the slots area, but the middle card doesn't have any extra room for that.  Unless you purchase more extenders and even then, I'm not sure if you can fit it below the cards like that.

If you wanted it in the drive bay, I'd imagine a single 80mm would do just as well as 3.
