Is it fine to use unpowered risers for 3x R9 280X's a board? 1x to 16x? Scrypt mining.

I am going to play it save here and say no. Not for scrypt mining. I fried a board within 24 hours using 4x 1x->16x unpowered adapters with 6870's.

Would two for beginning work? And then when I move to the ASROCK mining board I can use the molexes on board?

It will work, but it's not safe to use it like that for a long time.

I think 2 would work fine, but 3 is risky. this reddit help me a lot

I have found that underpowered ones can be hit or miss and when I had 4x Sapphire 7950's they would would be rather glitch or not work at all without the power (on both 16x-16x no power to 1x-16x no power cables). http://www.cryptocables.com/ has cables that worked for me everytime and were not cheap chinese crap.

General rule of thumb is, if 3 cards or more, use powered.

I have been running 80 Gigabyte 7950's on AS Rock X79's with 5 to a motherboard for over a year with unpowered risers and haven't fried anything.

The trick is don't use junk power supplies or crappy MB's.

I've never tried a riser with a 5970,6990 or 7990 as I always run these straight to the MB.

+1, my small 7950 farm is unpowered, using 7" 16x risers (some are 1x). Seasonic Platinum and Gold power supplies.
