Assuming you have a system with enough resources to host multiple BTC/LTC wallets (instances) with different encryption keys and accessed by different users.

Is there any restriction in the maximum number of BTC/LTC wallets that a single system (with a single IP address) can handle?

In other words, is the network restricting the maximum numbers of outgoing connections from a single node? can this system be automatically blacklisted/blocked from other nodes in the network, maybe to prevent flood?

Perhaps this has been discussed before but I can't find the thread.

no, there isn't any restriction, but why would you host multiple instances on one machine?

It is pitch black. You are likely to be eaten by a grue.

I was wondering how BitStamp/MtGox deal with thousands of users but I guess they have a common wallet and manage internally the transfers and balances.
