Hi. I have realised that using a password for the offline wallet that I have previously used on my online computer for another purpose is not a good idea and now wish to change it. Are there any issues doing this on the offline computer running 0.88.1-beta? Will my paper backup still be fine? Nothing will change?

Paper backups are not encumbered with a password.  The number one reason to use a paper backup is when you forget your password.    You could prove it to yourself by looking at the paper backup data before and after you change the password.  It'll be the same.
