You got it right. First use escrow, and as you become more and more reliable, people will trust you enough not to use escrow.

To be fair, even after several hundreds of trusted escrow transactions, trading somewhere else than on an exchange like localbitcoins and without escrow is a completley different ballgame. Especially when lots of monies involved

Is there a way to estimate if a coin is over- or undervalued?

I dont think there is a way. If there was a calculator for this it would be great!
