I was wondering if it was possible to have an account with a dealer where any time I deposit money in a certain account, they would automatically buy me some coins at the going rate?

EG, I do some work for a client and they pay into the special account and I get some coins.

I'm based in Australia so would need to be an Australian account.  (I couldn't expect a client to do an international transfer.)

There are several different types of Bitcoin clients. The most secure are full nodes like Bitcoin Core, which will follow the rules of the network no matter what miners do. Even if every miner decided to create 1000 bitcoins per block, full nodes would stick to the rules and reject those blocks.

Well you could set a lmit order if you're waiting for a drop in price to buy...almost all exchanges support that.

If your'e talking about some sort of auto buy into the upswings, you're probably looking for something more along the lines of crypto-trader.org.

So far as the australian part of it, that I have no idea.

Nothing as complicated as buying on upswings, just an account when money appears in it, the dealer would know its from me and go and buy coins.
I had a bit of a google but couldn't see much.
If mtgox had an aussie account, it would be good.

Not sure if a service like this exists yet. But I imagine there'd be a market for it for people that want to convert a part of their monthly wage into coins without having to worry about going to an exchange, creating an order, etc...

Just set a wallet-address (ideally cold storage / paper wallet) and set your bank account to periodically wire some money and be done.

We offer this service. It's currently limited to UK bank accounts but we aim to go internationally soon (unless someone beats us to it!).
