Prices are set up by people who Buy and sell there. not by exchanges.

Correct, Exchanges just offer the service of sending FIAT too, to buy/sell/trade BTC's. They take their commission on every buy / sell order to keep the exchange (hopefully anyway) secure, and up and running.

Its all by supply and demand the more buy orders the higher the prices go the more sell orders the more the prices go down. If you watch the charts on btc-e and monitor the buy and sell orders you can learn a whole lot by how it works.
