1. Particle / BTC
This coin has great potential. CPU mined - different from mostly-scrypt coins. Based on quark, but better balance of block rewards. Also cool new wallet (alpha now).
2. BAT / BTC
Not very popular yet, but I like it. It has some potential. I believe it will slowly grow. And BAT-fans are not going to let it fail. If you are the first exchange to add this pair, you will attract more users.
3. NUT / BTC
Interesting concept (nut-law) to control the price. Dev sets a guideline: "at time X, 1 NUT should be worth Y". Users are discouraged to sell/buy much below or much above this value, but there are no means to force them. When it hits coinmarket, we could experimentally test this idea.

I think that you should strongly consider ZenithCoin. It's rarer than a lot of coins (not in the hundreds of billions) and supported by an active community.
