I dont understand why most project dont put a date of ICO ending, they just make everyone to guess. On the website of this project the ICO extend till December and the campaign will last 6 weeks. Is the 6 weeks for campaign a tie down to be extended also.

The primary reason for that is because it's very hard to accurately tell 2-4 months ahead of time the exact day to end things. ICO project launching is a very complicated business, as you said it yourself "MOST PROJECTS" do such thing.  There's a lot of dynamic variables involve in ICO launching and those dynamic variables are hard to predict and changes every time like marketing campaigns, sales pitching where conferences/gathering may somethings move their dates, or some good events pop up out of nowhere but you know it's a good group of potential investors so you go there too and pitch there and that will cause delays in your timeline, and a myriad of factors. ICO launching may look easy on top but if you go to the bottom you'll see tons of people working 24/7 to make the top look easy and clean.
