The seed electrum chose itself is 12 words, and I tried the seed more than 12 words, say 24 word, even 48 words, they work too. Electrum now support the seed more than 12 words? Does that means the more word we use (choosing randomly), the more difficulty to brute force attack, the more safety we get? 48>24>12 ?

There are several different types of Bitcoin clients. The most secure are full nodes like Bitcoin Core, which will follow the rules of the network no matter what miners do. Even if every miner decided to create 1000 bitcoins per block, full nodes would stick to the rules and reject those blocks.

So, should I create a 24 (or more) words seed to use?  will it be supported in the future version?

Not recommended at the moment. You can use arbitrary length seeds starting from Electrum version 2.0
