In the past I had a VPS with a IPv4 address. Connection over console was easy with ssh remote_username@remote_host

Now I have a VPS with IPv6 and that command does no work anymore. How I can connect to VPS server with IPv6 address using the console (Mac/Linux)?

If on your computer you have an IPv4 ip and the server has IPv6 you can't connect.
Try using an tunnel on your computer, something like https://tunnelbroker.net/
