How hot and loud are the Sapphire 280X Toxics? Will I be able to fit 4 in a silence optimized case such as the Define XL R2 or 550D and keep them at 90 degrees Celsius with a focused flow fan blowing over them while maintaining an acceptable level of noise?

You won't able to fit all 4 cards in a case on motherboard without using risers, because it will cover the next pcie slot and you can only able to fit 2 cards in a case.It's a three slot card.

You won't able to fit all 4 cards in a case on motherboard without using risers, because it will cover the next pcie slot and you can only able to fit 2 cards in a case.It's a three slot card.
I though it was a dual-slot design or is it 2.2 slots? The ASUS R9 280X DCII would be my next choice or would the Gigabyte WindForce be better?

Don't buy gigabyte cards they sucks, Asus DC II  are much better and they are 2 slot cards you can fit them in a case.Sapphire R9 Toxic are 2.2 slot as your 2nd pcie is useless when the card covers it.

they are dual slot, you can fit four without the risers, just try to keep the temp low as a possible

they are dual slot, you can fit four without the risers, just try to keep the temp low as a possible
Noise is more important to me so I'm fine keeping them between 85-90 degrees Celsius.
