I wanted to ask if there is an alternative to Etherdelta?
Some exchange which you can use preferable with metamask and manually add a currency, which isnt listed yet.
or
Some service where you can do the same and make like instant swaps with accepting a button, like third party gets fees and holds the funds and upon agreement, tokens will be swapped.

"As far as I know" only Etherdelta and it's forked version, Forkdelta have some feature of adding ERC20 tokens manually which isn't listed yet.
For importing Metamask , Idex have that feature but doesn't have a manual adding of tokens. Tokens must be listed there first.
Im not sure about your last concern but I will assume you want an instant swap between tokens to tokens? I doubt there is because third parties will not bother to make a service for that if the tokens are not that popular or not establishing a good volume at exchanges. Im not sure though.
Anyways my answer only applied for ERC20 tokens as I think you are only referring to that and not with other coins.
