When sites such as http://bitcoinstatus.rowit.co.uk/ speak of hosts, are they speaking of Bitcoin Wallets?  I notice that mine has 51 connections at the moment.  Somehow I've been under the impression this is the case.

Yes, that's the total number of relaying nodes on the network.  99% of those are the Satoshi client / wallet.
