With a SSH server + Socks package, the way it works is you SSH out to their SSH server on the internet. That creates an SSH tunnel which is secure and also very common application type so it should not raise suspicions.
You Then have all your applications such as a browser, IRC configured to use the socks proxy provided. The socks proxy connections all go inside the initial SSH tunnel. So if you are on IRC for instance, your Internet Provider would only see you have an SSH tunnel created and wouldn't be able to see you were on IRC. This method is
VERY easy to mess up if its not thought about thoroughly and can lead to parts of data leaking out of the wrong place.
It is a popular method when you are in a corporate or work environment and want access to a jumpbox or home network but only have HTTP Proxy access.
