You should start with Binance, as it doesn't require KYC if you want to withdraw up to 2 BTC per day, more than that you need to pass KYC. Moreover, it is one of the best & biggest exchange with in terms of high volume & high security. If your coin/token you gonna trade isn't listed on Binance then you have to look at their website or on CMC for the exchange that has listed the token you are holding and can trade only there or try forkdelta Dex exchange for ERC20 compatible token to trade.

-Not known for always having a bad issue

After listing some exchanges that fit the above criteria:

-Check their cash-in (deposit) and see if it will passed your preferences
-Check all the fees associated in every transaction
-Check the limits (KYC terms)

For exchange recommendations, you can compile all exchanges that will mentioned here but the final verdict will be based on your analyzation and actual usage of that exchange. I don't really recommend an exchanges because we have different preferences so this is your assignment now.

Binance might be the best answer for that.
Since they USDT and almost every coin that have a large amount of trades within a day.
If you are looking for ERC20 tokens then some of them are also listed in the said trading exchange.

Trust issues? Never experienced one problem yet, although I have read some with complaints. They could be just planted to destroy them.

Just addition into these is that, you may check also feedbacks from the current users cause it could be some basis that certain exchanges is playing well or there is huge problem inside. Security also is very important. Just don't fool for phishing sites cause it definitely bring you down and nothing left in your wallet.

When I  started doing crypto trading I chooced exchange that does not provide feature of stop loss,  and this is bring me to loss much money because I only possible to monitor the chart in 7 hours a day but crypto always move 24/7 without close.  So in my opinion first important  thing is crypto exchange that we use should be have feature of stop loss.

For an idea exchange platforms the following should be look on:
1.Security. The first thing I do look on in any exchanges that I want to transfer fund in is how secure it is.  Many investors has lost their investments capitals through unsecured exchange . If you are an investors then security should be your first concern.
2. Volume: You need to know and compared the volume because it creates liquidity.  I do buy some coins and at the end cannot sell them because of low volume.  I prefer binance and hitbtc because of volume.
3. Fees.  The fees should also be one of the things you should look on to before investing.  Many exchange especially the old one still retain they trading fees and this do affects the cost of trading.
4.Rate at coins marketcap.  I also look at the rate of exchange platforms on coins marketcap. This enabled me to be able to know the performance of those exchange over time.
Investments, is very risky and you should not go into it without adequate knowledge on how trading work and how to trade profitabily.

I think most of people look beside fees is volume trading, because with low volume trading, it can make people not want to trade in there because lack of volume means slow moving of altcoin price.
