THE TUBER MAGNATUM PICO FOR SALE / PIEDMONT WHITE TRUFFLE

The Piedmont White Truffle, or to give it it's scientific name; The Tuber Magnatum Pico, is the jewel in Italy's and Croatia's crowns. Italian Mycologist Pico was so impressed by the rare aromatic truffle in 1788 it bears his name and the title is still recognised and widely used today.
These rare gems cultivate themselves in the Piedmont area of Northern Italy and The Motavan Forest on the Istria Peninsula in Croatia. Only in these locations it seems, that the soil is perfect for the growth and development of this truly flavoursome fungi. The Tuber Magnatum Pico  are however, becoming rarer and rarer and no one seems to be able to determine why. Found under the ground around hazel and oak trees, The Tuber Magnatum Pico, typically weighs 50-400g. As with anything else in life, there have been exceptions to the rule of course and the most note worthy found in 2007. A 1.5kg Magnatum Pico truffle sold at auction for a third of a million dollars! Why so much? Well, these aromatic and very tasty truffles are sought and fought over by chefs, wine merchants and connoisseurs from around the globe. Just a hint of a taste in a meal is quite the diners delight and all the top chefs know it.

ITALIAN BLACK TRUFFLE FOR SALE, AKA PERIGORD, SCIENTIFIC NAME, TUBER MELANOSPROM VITTADIN.

The Italian Black Truffles have the scientific name, Tuber Melanosprom Vittadin but they are better known as the as the Perigord. They are named after the legendary truffles from the Perigord region in France. Found in Perigord, Vaucluse and in Norcia, Umbria, these truffles are one of the most popular in the world. This versatile little truffle can join every dish on a three course meal. Slice it uncooked on pasta for a starter,  cook shavings under the skin of a chicken or duck for your main course and for dessert treat your guests to some home made truffle ice cream! Your drink needn't miss out on the fun either, grate this truffle right into your wine to give it an earthy yet sweet cocoa taste. This  blackish, wart textured truffle is one of the most expensive in the world due to its lack of quantity. Although ripe from November, It's aroma is at it's strongest in February. Many truffle hunters leave their homes on a still aired dawn so as not to be seen harvesting. They Leave little pickings for any hunters in their wake as the hunters dog can pick up on the scent of the Italian black truffle quite readily in the cold air of winter.

THE BURGUNDY TRUFFLE, SCIENTIFIC NAME, TUBER UNCINATUM TRUFFLE FOR SALE.

The Tuber Uncinatum is more commonly known as the Burgundy truffle. These black truffles are the autumn variety of Tuber Aestivum, or Summer truffles, the only difference between the two is the time of year and a slightly more flavoursome taste. It is the most widely distributed out of all the truffle species. Found among the roots of trees such as the Hazelnut, Chestnut and the oak, the Burgundy truffle can be found in almost every European country. The Burgundy truffle has a rough dark skin that yields distinctive diamond shaped points. Once sliced open it offers a delicate hazelnut aroma and has an earthy hazelnut flavour.  It has far less flavour than the black winter truffle but as mentioned a stronger flavour than the Summer Tuber Aestivum, this is most likely due to having more time left underground. As Burgundy truffles do not stand up well to heat, they are best enjoyed uncooked. Burgundy truffles are usually available through September to December.


BLACK SUMMER TRUFFLES, SCIENTIFIC NAME, TUBER AESTIVUM TRUFFLE FOR SALE


Black Summer truffles, also known as Scorzone or by their scientific name Tuber Aestivum  are as their name suggests to be found during the summer months. Most commonly associated with Italy, The Black summer truffle can be found readily throughout Europe. This truffle can be found below the soil's surface in open woodlands, out of all the truffles, this is a rare trait. Hunters take note of the absence of plant life under the trees. The bare areas that signify that truffles are present are called terre brule, which in translation means burnt ground. The Black Summer truffle with it's rough, almost crocodile like skin, has the same distinctive diamond shaped spines as the Tuber Uncinatum.  Whilst black summer truffles may outwardly look like their winter counterparts, these summer truffles are very different inside. They are at their peak when their flesh is grey with a white marbling effect and  their aroma and flavour is  known to be far more delicate. The difference between the two is due mainly to less time underground. With the Black Summer truffles flavour being described as a mild garlic with a woody, hazelnut, earthy taste, this truffle pairs well with the finest of foods such as caviare, lobster and fine hard cheeses.

THE AUSTRALIAN WINTER TRUFFLE FOR SALE


The Australian Winter truffle is not native to Australia. Perigord truffle spores were shipped from France and transplanted in New Zealand in 1987. Although not native, natural environment and the Southern Hemisphere allowed for the fruiting and creation of the species. As with all the truffle species, The Australian Winter truffle is not of a defined shape. Roughly rounded, this truffles outer colour ranges from dark brown through to black. At maturity the inside is deepest black, broken by veins of intricate lacy patterns.
The Australian Winter Truffle is most identical to the Perigord truffle for obvious reasons. It has an intoxicating aroma and it's sweet flavour is described as hazelnut, forest mushroom and a refreshing undertone of mint. With this truffle being so intensely flavoured it can withstand long slow cooking processes.
The Australian Winter truffle has a lovely niche market too as it's the only winter truffle that is available during May through to September. This is due of course to being available through the Southern Hemispheres winter months which coincide with the Northern Hemispheres summer months.
High demand and limited production create soaring prices for this very flavourful little truffle.


THE COMMON BLACK TRUFFLE AKA BAGNOLI IRPINO PROVENCE, SCIENTIFIC NAME, TUBER MESENTERICUM Vittadini

The Common Black truffle, also known as the Bagnoli Irpino and having the scientific name of Tuber Mesentericum, is the most common of all the truffles for sale, yet has the least appeal among truffle connoisseurs.
Starting it's long history in Avellino Italy, it was widely and commonly known for it's gastronomic uses. The properties of The Common black truffle for gastronomic use however, has long been under debate. 
Referring back to the lack of appeal, it's dark skin and wart like appearance does not in itself put buyers off.  So what does?  Well, this delightful truffle is the most pungent of them all. With most truffles we use the terminology aroma but with the Common Black truffle, we can safely say it has an odour described widely as tar, phenol and iodine. Shortly after harvest, fortunately the odour disappears.  One can't help but wonder though, whether the truffle is trying to give warning as to the bitter taste of it's flesh, which has been likened to very bitter almonds.
Although The Common Black truffle for sale, that can grow to the size of an egg is very under appreciated, there are many dishes that it compliments.
