When buyer buys BTC from me through escrow, does he see my Localbitcoins wallet address or he see escrow address only?

By "my Localbitcoins wallet address", do you mean your balance? Or your previous dealings?
When you send some Bitcoins from your wallet to the escrow, the other party will not be able to see it but localbitcoin support team will be.
If you care about privacy it is better to use any mixing service "or click blown" after you withdraw your money from that platform.

I mean my BTC address.  We all know that BTC transactions are public viewable, so i don't want the buyer to see all transactions i made before with other people.

No because you are using a 3rd party wallet (localbitcoins) to make the transaction.

Basically you deposit BTC into your LBC wallet and those BTC are then forwarded to a cold storage address where LBC holds all their BTC. When you sell to someone and they withdraw, the BTC comes out of that wallet and its impossible to find out which deposit BTC was used.

If you sold your BTC to someone using wallets like Blockchain.info, Electrum, Copay, Bitcoin Core, then yes he would know exactly what your public balance is on that BTC address.

Unless you actually send him an address to pay to (which makes no sense when you are using LBC, since escrow protection would be the only reason you use LBC instead of dealing direct), then no, they don't see any of your addresses.

Everything is done on localbitcoins once the deal is open, so there isn't really any on-chain activity that goes on anyways. It makes no sense for Localbitcoins to disclose your deposit address to others when there is literally no point of doing so.

Also, if you're talking about bitcoin addresses in general, and not just your localbitcoins deposit address, then there is even less reason to worry. LBC has no way of knowing which addresses on the blockchain are yours in the first place, let alone being able to relay that information to others.

At LBC, as a seller, you can only open a trade when you have enough balance in your LBC wallet. As soon as a buyer accepts the trade, it can only be for an amount you have, the amount is locked in escrow. Buyer has no need nor ability to see how much you have. He only knows the amount he accepted to buy is in escrow, waiting to be released by you.

Just curious to know, though, but why would you be concerned if buyer can see your address, or any address for that matter?

There is no reason to be concerned about Localbitcoins sharing your address. And no, buyer does not see it when you open an advertisement on their platform.

They simply don't do it because it makes no sense for them to do that when there is already a middleman which is themselves who are handling all the transactions. You don't ever send funds directly to someone else's address.

I don't see a reason to be this concerned about the privacy of your funds when dealing on localbitcoins, but if you want, you can certainly use a bitcoin mixer when depositing funds into your localbitcoins deposit. That way, even LBC themselves won't know what your actual address is that sent the funds. But if I were you, I wouldn't worry about this unless the amounts are large.
