I'm not an expert but i'd also recommend stake since they're one of the most reputable bitcoin gambling sites and registration only takes a few seconds. I suggest checking these as well, peep keeps a great list of places however they are mainly sportsbook, they do have other stuff as well but mainly focused on sportsbook. For example, if I were to gamble on a sportsbook I would definitely gamble on nitrogensports and bitcoinrush but if I am going to gamble on dice or plinko or blackjack I wouldn't go there, I would go to either primedice, stake or fortunejack to be honest with you, if I am going to play poker than I would select SwC as the best one for me tbh but there seems to be new ones coming up every day so you might wanna look around and there is a bustabit type crash game as well and there seems to be other examples for other coins but I still think bustabit is the best. Seriously whenever someone mentions a gambling suggestions its always either primedice, stake or nitrogensport (and now bustabit as well). We really can live with just those 4 websites forever. Even primedice started to be a bit obsolete with the stake website having dice anyway and all that.
Do you want to play a dice game without a hassle? Go with primedice (or stake now) and you will have no problem, wanna play on a casino ? Play stake and you will be fine. You wanna play sports betting ? Go with nitrogensport and last but not least if you wanna play the now famous crashing game which has the most wagered amount amongst all casinos? Go with bustabit. Sometimes gamblers are boring and they want to see something new, that's why I believe gamblers are moving from one site to other sites depends on their own mood. Trying luck is also a reason why gamblers try other sites, I believe many people thinks like this "maybe I'll get better luck at A/B/C". Back to main question of OP, there are bunch of sites that does not ask for KYC but once again I think there is a term in almost all sites that KYC might be asked when there is something suspicious on the account.

I see the SWCpoker last few days ago and I already download the app and good because you have application for that. Depending on what you like, many gambling sites do not require KYC to create an account. And even I believe when there is a gambling site that needs a KYC when creating an account, the gambling site won't last long. If you like playing dice, it looks like Bustadice and Betdice are two places you can choose.

I think many recommended gambling sites are secure because they don't want to lose the chance to get more gamblers to play in their sites. And I think you can choose the gambling site in here to start and as far as I know, many of them are not require the member to fill the KYC which I don't want too. Nitrogen will be a good site to start and you can find many other betting sites which don't need KYC to their member.

The chip thing is getting more regular in many places now, not just poker but in many gambling places people either go with chips or bits which is about the same. It is still bitcoin if you think about it, instead of writing how many bitcoins you have it just writes how many chips you have but its still only reversible to bitcoins so you just hold chips that represents it.
Bits are kinda the same, they are just different from mbits or satoshis, 100 satoshi if I am not wrong which means about the same in chips in numbers as well. I kinda like that type of gambling because it makes 1-2 bit/chip bet on poker or any other game more entertaining considering they are quite low in price but also allows us to continue gambling at the same time. I wouldn't wanna bet 1-2 satoshi nor 1-2 bitcoins so this is the perfect amount.
