Miners will make their money from fees for transmission by then. They will be more of a payment processor than a miner, but will still keep the network up.

Nothing much happens, the last block is just gone, but by then bitcoin will be so rare and valuable miners will continue mining just for fees.
BTW for the people that said we'll be dead by then statistics has show that people this generation are likely to live over 150
