I was looking stakingrewards.com and I'm honestly not familiar with POS coins so I was hoping someone could suggest something to use.

I thought about IOST or Livepeer but not sure. I would prefer something that doesn't require that much of an investment to start.

Veil - New anonymous coin with a large potontsialom. PoS is available. So look at her very promising project.  Price is not very high $ 0.3

in my opinion why don't you try altcoin npxs. npxs gives 2% rewards every month. and I'm not sure with iost coins or anything else because the altcoin is currently decreasing because bitcoin is not stable so saving altcoins like iost has risks. different from altcoin npxs it has a value of 2 digits, the market volume is very high so the price won't dump if the bitcoin is not stable

Well the only stake coin I really know of now , DASH, maybe because it was the first stake coin I knew about, I have not really picked interest in researching more on other coins, I know people have spoken well of DASH masternode and how it’s has been a good investment, but the problem with DASH masternode is that it is too expensive, I think 1 unit of DASH cost about $300, and I learnt that nay interested stake holder in dash needs about 1000 units of DASH to run their masternode, which is way too expensive for majority of crypto holders, but if you have the money, I think it is worth it.

You can try pundiX, it's simple just hold pundix on your eth wallet and you will reward every month.
It's not staking but monthly airdrop, I think it's almost same  Grin
Here calculator for pundiX : https://stakingrewards.com/asset/npxs

Except NPXS ' price keeps going down. It's one of the only altcoins that doesn't follow the bull market.
Not so sure it's a good investment.

Your post seems interesting, so I would tag along and see what others will say on what to invest and stake my money too. I have heard about IOST but never tried to invest on it, maybe some knows about it.

You right, but pundiX already have a real product, so I think NPXS can be a longterm investment.

You can try Callisto (sidechain Ethereum Classic) - https://callisto.network/
It is simple and not expensive. CLO available on these exchanges: https://coinmarketcap.com/currencies/callisto-network/#markets
