Hi im fairly new to the mining world, Ive mined with my home PC in the past and with the cost of electricity it wasnt worth it to me so I stopped. My office has come across 2 full racks (20) dell poweredge r720 servers.
They only have CPU graphics but have 16 gb ram dual xeon 3.0 10 core cpus and can run for 365 days. The best part is our office is in with 30 other offices and our electricity is not metered and is free. Can I mine from a server?

In short - unless you are mining altcoins, forget it. If you want to mine alts, then this is the wrong area as this is the Bitcoin-only area.

You can run CPU mineable coins with those servers. Check also https://whattomine.com/ for possible alts that may return profit.
Mining Bitcoin with CPU servers will just be a waste of time and resource since its btc is being mined now with ASICS.

1. You have to check more clearly the capabilities of those Xeons.. if they have AES-NI instructions you should be able to mine CryptoNight algorithm (Monero and others). Leave one of the servers mine for an hour or so, check the reported hashrate, maybe decrease by 10% for sure, check on whattomine if it worth your time.

1a. Make tests with more mining programs, especially if you go on CryptoNight path, since there are some that use only the CPU 100% and some only some 30%, in some cases returning similar hashrate.

2. Beware, the "free, unmetered electricity" is tricky. The building owner's bill will rise and may start checking what causes the difference (and may increase the bill or even accuse you of theft), also if the office is not your and you only work there, your employer may not like this.

You can run CPU mineable coins with those servers. Check also https://whattomine.com/ for possible alts that may return profit.

Before checking out what coin to mine verify what algo suits best for the system. Run the benchmarks with something like https://github.com/tpruvot/cpuminer-multi to verify it.

Yes indeed! You may be one of 30 offices, but that server rack is going to be pumping out unusual levels of heat, so won't be hard to spot where the sudden extra power demand is going.

If you are not the server administrator you will be caught early on because a good server administrator always keep logs, add performance counters to check the performance of each server and he will see immediately that the resources are being used more than usual.

After that is clear if you still want to mine , yes it is possible to mine cryptonight coins with your servers Cpu-s.

All of the physical servers are in my possession and are basically blank slates and are ready to install whatever on them. I am good friends with my boss and ive already suggested the mining to him. We already run servers for other projects out of the office so the meter im sure already turns quite a bit. I guess I need to look into some software and start doing some trial runs to see what gives me the most and go from there. Can these programs be ran off of say windows servers 2016? Or will I need to install a sandbox on the server? and install windows 8 or 10 on the sandbox?

I think you will be good with Windows Server 2016 also because most mining softwares for Cpu mineable coins are supported.You might need to do a little tweakings for some of those softwares but nothing that a google search cannot solve.

You won't have much luck with those servers, the amount of coins you get will be negligible so hardly worth the risk. If you really win't get caught then try xspec or deeponion for privacy

I think we are in the similar category, still doing same research, I think what one should do is to find out from those mining the specific coins you are interested in. I think there are specific projects for specific hardwares.

Anything "Monero-based" coins is the best pick for this, or just mine Monero.
With that 20 servers running 24/7, it's possible to earn a stable profit... and unemployment.

Take note: most CPU miners are designed by default to use the full capacity of the processors that may disrupt the main processes of your office's servers.
DYOR to minimize the CPU usage to a minimum like 25-50% so that it won't overwork the servers or get noticed.
Also, the HSF fans will likely get louder as the processor load gets higher, 80% fan speed is a lot louder compared to 25-50% fan speed (20 of them might cause a nuisance for the employees).

You can use a physical server to do mining but it is not recommended because if you want to do mining and want to get the results of the mining benefits you do you have to build a mining site and use tools that can help you when mining.

Will the number of coins be small? Nonsense. On these servers he can earn monero or any other coins on algo cn. But best of all monero.

If u know your hashrate then try  cryptunit.com to know most profitable cpu coin to mine. Not very much to earn.
But as stated by other, your cpu will run on 100% usage so take care
