We are still looking for someone. So since this is still a new website and the operator will only get a percentage, I know that for sure, at the beginning nothing will be paid since there are income from there as of now. So don't you think you should be paying the operator for starting, so they don't have to be doing the job for free? I don't really know if you get what I mean, cause you said that the website is still new, and that means it's getting no traffic or maybe less as of now. So you need to look for someone who is an expert and be paying them for now, maybe when the website starts getting traffic, you can then switch for a percentage share. Just pointing out

I don't think so. That is not how it works when you get equity. Its not like you get money and then equity. You get equity or standard pay not switch up later on. Everyone who is presented with the option to get pay or equity will choose equity. Why? Because long term it gets you more return then a fixed amount of money or say pay per hour. The harder you work and the rest of the team the more chance of success and results. Also nobody on the team is currently getting paid. It would be very unfair to pay someone directly and give them equity too for this job towards the others.

Why don't you look for dice game operator partners, which you play to:
Services. In my opinion there you will easily offer to the operator you want.

It would help if you posted more info about your 3rd game which is the provably fair dice game. Like you said before, "another dice game?" There needs to be some unique aspect to this game because many people rather play dice on an old and trusted website rather than a new and up and coming one.
If you posted a demo or some type of images at least so we can see what you are referring to then you might get interest that way. I am assuming you are only paying %'s after the person generates a few referrals and in this case its important for that individual to see if your idea can be sold or not.
Because if its a regular dice game which has a low chance of getting new users then most people won't waste their time promoting it since it won't be worth the effect.

I think it will be a nice try to include your vacancy in cointelegraph's job section, a lot of people including serious ones, investors and etc come to this website and you can see statistics of their audience (adverts there may help you too).
Also doesn't matter if there are still many dice websites created, you can beat a lot of them with correct strategy. Usually design matters the most too after fair games and quick support. (I know a lot of people who gamble on specific website because they like UI too, trust is main factor of course).
