ElectrumX docs mention a non-pruning bitcoin daemon is a must.

Is there a way to run Electrum server (either ElectrumX or another project) on a pruned node?

No, you must be running a full Bitcoin node. Otherwise, it would not make any sense since your or someone else's client would not be able to synchronize transactions older than 2 days (assuming that it was possible to set up and you kept the default pruning settings).

ElectrumX or any alternative Electrum server projects requires txindex=1 which is impossible for pruned nodes to be able to function as a "server".
Otherwise, it wont be able to query bitcoin transactions from the blockchain.
