I looked up an old address I had and saw which was my change address because the other one the utxo was still at the same address. I wanted to keep watching it to see when it moves and how, but also to try to track my own outputs. Is there a way to save only a few transactions or any kind of GUI to watch the splintering and combining of outputs so I can see more than one transaction at a time? I have used wasabi to manage unspent outputs on desktop. On iOS I haven't found a client that let's you view outputs or create new accounts to keep outputs separated. On Android, Mycelium allows you to create different accounts for different utxos, but then there's no way to combine them. Another route is to "view unspent outputs" from the menu on Accounts page and create a transaction that matches perfectly the size and fee to create (1 in 1 out) transactions or even (x in 1 out) transactions. I would guess bitcoin core cli has the more powerful coin control mechanisms.

there is no tool that i know of that lets you track a single transaction output, they all do it with "addresses"  which means you give the tool (like the wallet) your address and it keeps track of all the transaction outputs that belong to that address and shows their individual information such as their value, the block they are included in, spent/unspent status,...

for coin control i think Electrum offers what you are looking for. there are two ways of doing it:
1. from address tab
you right click on an address and select "spend from" so that you can spend all the outputs from that address in one transaction and nothing more from any other.

2. from coins tab
it is the same thing but you see coins aka transaction outputs individually. it is a list so you can sort it by clicking on its headers. for example clicking on address header sorts the list based on address so that all transactions belonging to same address are under one another. then you can select any of them you want and spend those only.

Yes for bitcoin-qt (Bitcoin-cli doesn't have a GUI), but it's disabled by default; If not better, it's in par with other client's coin-control feature.

Electrum desktop can pretty much do everything you've mentioned here, including client-side freezing of UTXO and addresses.
To view your available UTXOs, click "view->Show Coins" then open "Coins" tab.
What you need to do is to freeze the specific UTXO (as a mark) because you currently can't label each individually.
For multiple selection, use CTRL+Left Click, then right click to select "spend from".

Thank you! Excellent replies. Electrum desktop seems to be the way to go. It's a shame it's not easier from a mobile device, but this will still help a lot.

The only mobile wallet with coin control that I know is Coinomi (https://www.coinomi.com). It is closed source and it is a multicurrency wallet. Not as safe as Electrum, but it allows you to control which inputs you want to spend.

Electrum mobile does not support coin control.

Coinomi gave me the creeps when I first downloaded it last year. I don't know why and I can't explain it at all, but I have avoided it since.

I think my hackaround way of using Mycelium is workable. The other amazing thing that Mycelium does that I haven't seen in other wallets is that they make the change address the same format as the receiving address (bech32, P2SH, or P2PKH), which should help hinder blockchain analysis. Samourai wallet has some coin controls too. They show you utxo's and allow you to mark some of them unspendable which allows you to choose what outputs you spend from.

I didn't know samourai allow coin control as well. This is exactly what coiniomi does , allows you to mark some inputs as unspendable.
This is a must to me, I think every wallet should have this feature.

I am going to recommend samourai from now as, as it is better than coiniomi (if you don't need a shitcoin wallet)

Really? Samourai wallet allows CoinJoin transaction so it must provide Coin control features for its users. No one can use Coin Join transactions without access to Coin Control features which are powerful tools to increase anonymity.

Quickly search gives me:
Wallet Update 0.97 - Coin Control, Dust TX alerts, Like-Type inputs and more.
Of the wallets that support Bech32, only the following wallets have Coin Control;
