We already accept crypto payments on our site, but instead of having multiple on-ramps and off-ramps, we would like to hold client balances in a stablecoin.

As we are a UK based business, it is preferable to have a GBP stablecoin, rather than a USD one that is open to exchange risk. Any suggestions?

The Bitcoin software, network, and concept is called "Bitcoin" with a capitalized "B". Bitcoin currency units are called "bitcoins" with a lowercase "b" -- this is often abbreviated BTC.
