if we will base on what is the performance now then yeah UNIswap is the  most figurative and performing Defi coins now.

also the other 2 best performing is Polkadot and ChainLINK  that performing best in terms of ranking,taking the number 7 & 8 position is not that Easy for new projects such those.

I think that all this hype about defis is gonna pass in some time. Uniswap has a great user interface and I'm sure it is gonna keep its popularity even when defis fever will pass)

Recently Uniswap has been in the top financial publications as well so it is getting huge spotlight and i think it is ready for even more market dominance, i am talking in trading and exchange sense because it is sucking huge volume from top exchanges so competition is growing while if you talk about defi uniswap is already a leader.

I wouldn't have known there is anything like Uniswap if not for the Defi hypes, the OP asked a valid question as far as Uniswap revolves around only Defi coins and some selected Stabled coins. It remains the greatest exchange for Defi there is no counter observation to this fact.
