This is not good advice for me. Exchanges are not meant for storing our cryptos. We understand that you need to store cryptos for you to have continuous interaction and trading activity. I think better you create a Ann thread off this site, because everyone read the each and every stage of this site But in my opinion Binance trading site is the more comfortable to buy and sell the trading fees and also little less trading fees on compared to other trading site. It is really a big hassle if you will open in an exchange that have KYC, I think the reason why I do not want to do a verification is because I think that my identity will be stolen or used by some strangers out there. Binance is good because you can deposit and withdraw funds even without verifying your identity. There are many good exchanges out there but they are requiring KYC to their customers so for me it is a big no, but there are instances that I verify my identity because I do not have any choice especially if the certain token is listed on just one exchange and the KYC is requires.

Binance has probably one of the easiest and quickest KYC I have ever seen, I did it very recently once again and I can tell you that it took me less than 2 minutes to give all my info and I was ready to go, they accepted it very quickly as well it took them under 5 minutes to accept my KYC too. They are also one of the most secure places in crypto world and they are insanely rich from all the fee's they take as well, they reportedly bought CMC for 400 million dollars whereas they also got hacked just a year or so ago for thousands of bitcoin and never made us pay for it, they paid from their own pocket.

Yeah, we need to be concerned with our identity because once we give it to a third party, we never know what they will use with our document, especially if we are not sure about them. It is better to search for an exchange that is not used KYC, but we can use their service, although our account will be limited. It is not a problem to have limitations because we can still use that exchange.
