Yes I am in the EU
The questionnaire I have no issue with and filled it out but I dont know why I need ID considering I already provided it when I joined.
I emailed them about it and they said I have until the end of December to comply or my account will be limited and 3 months from then it may be suspended

I dont know what other service I can use to buy BTC that doesnt ask for ID
I  obviously have an account with Binance but haven't set up a credit card with them

Probably some new EU regulation that requires all user to provide their ID again. I thought those questions were intrusive for which you didn't want to fill, but looks like the questions are not the problem. If you have already provided your ID before, I don't see any problem doing it again.
Have you tried those bitcoin ATMs for buying? They have shitty price  but you don't require ID (up to certain amount) to buy coins. An sms verification is all you need.

I have no problem answering the questions if its for them and not been passed on.
I google ATMS yesterday and found a few listed going to see if they are active. The only place I have actually seen them is in Kyiv

I make take the plunge and set up a private key any recommended tutorial on doing so for some one who doesnt know what they are doing

ATMs are simple to use. Have a look over here first https://coinatmradar.com/ . You can finds atms near you. Look for the status and see if it is reported online by the operator. This way you don't have to go and check if they are working/online.
Each ATM has different fees (some of them are crazy). So make sure you choose one that you think has a reasonable fee. As for tutorials, maybe you want to read this https://coinatmradar.com/blog/how-to-buy-bitcoins-with-bitcoin-atm/

Bittrex is stealing money. They are blocking accounts and not allowing people to withdraw unless they send them a number of selfies.

Left profile, right profile, holding a piece of paper, holding your ID. Insanity! I send pictures only to people that I trust.

This only shows that exchanges can steal if they want to. They can make the verification process so hard that most people will get frustrated and discouraged somewhere along the way and *poof* free money for exchange.

As a replacement for using your Coinbase account as a wallet, yes, a hardware wallet is a great idea.

This week is a good time to order one too. 40% off hardware wallets for Black Friday: https://shop.ledger.com/pages/black-friday

Always buy direct from the manufacturer. There are some additional security risks when dealing with third party sellers.

I wouldn't order from Amazon, or any third party reseller. There's a chance you could receive tampered products.

According to Ledger, they ship in 1-2 business days, from France: https://support.ledger.com/hc/en-us/articles/360006562194-Delivery-time

Ledger has official stores on Amazon, as long as you buy from them it's the same thing:
https://shop.ledger.com/pages/retailers

For some, it would be more convenient to order from Amazon, although I don't think it makes any difference in shipping time.

Actually, quite funny the .ES site has a black Friday offer on nano s, FR and DE don't.

I dont really care what Coin base knows I just dont want them sharing the info
They are surely not collecting information for fun, are they?
The fact that they are gathering information about you means that they will share it somewhere once authorities request for it.

Since you are using Coinbase specifically to just buy Bitcoin for now, why not opt for p2p exchanges that do not require KYC like Localcryptos, Bisq, HodlHodl?

Ledger has official stores on Amazon, as long as you buy from them it's the same thing:

Amazon has had too many issues with commingling of products from different sellers (even when no commingling was supposed to be taking place) that I would never buy a hardware wallet from them (or anything intended for consumption for that matter).

Signature space available for rent.
